Authentic Greek Salad with fresh oregano & extra virgin greek olive oil Sapfo

I love my job. I really do. And I feel so blessed, that unlike other people I am doing what I love, in an everyday basis and without any obligations. My work is full of new challenges daily, new experiences, new customers and customers that become friends. One of those new challenges and experience was my acquaintance with Sapfo® pure Greek olive oil and the Papadellis Olive oil company. 

I have discovered the company and the pure Greek olive oil they produce, a few months ago, in a trip I had in Lesvos island. I had to make this trip because I was blessed enough, to be the godmother of my best friend’s daughter. She named her daughter Rapahaelia, after Saint Raphael’s name and we had to travel all the way to Lesvos island where St. Raphael is worshiped from Greeks and Cypriots and the Christian Orthodox of the whole world. In his honour and memory in less is the  most prestigious church and so we packed up with the rest of the gang to travel there and to baptise the little girl.

Although it was very short, it was a nice trip and very adventurous and if i erase the heavy turbulences before landing our to strong winds, everything was magical and mythical. The ceremony was unique, the sceneries breathtaking and the bus sea was surrounding us! When we finished the ceremony, we were invited by the Papadellis family, closed friends of the family, for a grand and majestic dinner for the occasion.
All 100 guests we have dined and dance in an amazing place under the stars, among hundreds of olive trees and we had an amazing gathering with all sorts of  Greek food, endless wine and ‘Mytillenean’ sweets, with a main ingredient, the authentic and rich pure Greek olive oil Sapfo®.
Sapfo® olive oil, is produced and distributed by the Papadellis family and is made every year by their own olive trees, that have been looked after, with the greatest care and love, from generation to generation.

My surprise and happiness was enormous for discovering all these new flavours and I have requested to meet and speak with the family, to congratulate them of course and to ask for a few family & traditional recipes and tips, to bring back home with me and of course share them with you.
Mrs Papadellis was more than happy to share a few secrets with me, like the pie that is made in Lesvos island, tips on how to serve the Greek olives, tips on how to make the perfect ‘katsikaki psito” – thats small goat in the oven – and some tips for the ingredients of a choriatiki or as most well known for a perfect Greek salad’ 

“Using the purest ingredients is what makes a Greek salad or Choriatiki so special. Use, bio red ripe tomatoes and small green peppers, olives from the greek villages. Don’t be afraid to use plenty of dry oregano and fresh oregano leafs, onion and greek tacos. Put some caper too and never forget to pure plenty, of the number one ingredient, pure Greek olive oil..” Mrs Papadellis told me.. because olive oil is a family affair!

GREEK SALAD OR CHORIATIKI SALAD

  • NO Lettuce
  • 4 bio, mature & red small size tomatoes, cut in 4, {peeled – optional}
  • 4 small size bio cucumbers, half peeled, cut in two and diced 
  • 200g of Feta Cheese, mashed into chunky pieces 
  • 2 bio small, green peppers, thinly chopped
  • 1 small red onion, finely and thinly chopped 
  • 2 – 3  tacos {Greek rusk}, chunky break
  • a small handful of finely chopped capers
  • sprinkle with dry oregano
  • a handful of selected leafs of fresh oregano
  • plenty of Sapfo® pure olive oil 

Directions:

Place all ingredients in a bowl and gently mix. Using your clean hands is even better. 

Sprinkle with dry and fresh oregano and pour plenty of Sapfo® Greek  olive oil, mix well and serve chill.
