Cooking with Olive Oil: Mytilene Beef & Chickpea Stew

 COOKING WITH OLIVE OIL : MYTILENE BEEF & CHICKPEA STEW

For the recipe of Mytilene Beef & Chickpea Stew you will need:

  • 1 kg beef,
  • ½ kg chickpeas,
  • 2 onions,
  • ½ kg tomatoes,
  • 1 tablespoon tomato puree,
  • cooking soda,
  • salt and pepper,
  • virgin olive oil.

Leave the chickpeas to soak overnight in the cooking soda and water.

Rub them between your fingers so that their skins come off. Rinse the chickpeas.

Dice the beef.

Add olive oil to a pot and sauté the beef along with the onions.

When the onions have become transparent, add the chickpeas, the tomato puree and the tomatoes, and also sufficient water to cover all the ingredients.

Add pepper and salt and leave the mixture to cook for approximately 30 minutes, or until the chickpeas have thickened and the beef has gone soft.
